So! First off all, you need sourdough starter of course! Making it is really simple, just make a slurry of water and flour (i find rye flour works best but wheat should work as well), it should be about the consistency of yoghurt, but its fine if its a bit thicker or thinner. The amount isnt that important, but perhaps use about a cup of flour to start. Then, just leave it covered with a towel to grow. The next day, add a couple spoons of flour and enough water to maintain the consistency, then repeat the process every day until its properly bubbly.
So, when the starter is done, and you should have enough starter to not have to add much water or any water at all for the dough, add salt, and optionally malted rye flour and sugar (if you dont like the sour taste of sourdough, you should add more sugar, it reduces the sourness). If you taste the dough, it should taste a bit too salty (that will reduce in the oven). The consistency of the dough should be thicker, more plasticine-like. A dimple pressed into the dough should maintain its shape and not fill in.
Once the dough is ready, let it rise in a loaf pan. It should be a bit less than doubled in height, or, if you press a dimple in it before letting it rise, it should be filled in when its ready.
After rising, preheat an oven to 200°C and put the bread in once the oven's hot. bake until the top is sufficiently brown, a toothpick insterted in the center should be clean.

I like making fruit bread, just add diced dried plums and apricoses, optionally chopped nuts or any other type of dried fruit.
Seeds are a very nice addition, i like using all types like sesame seeds, flax seeds, sunflower, pumpkin, theyre all good!
